Sweet Victory Pie

This is Jenna's "Sweet Victory Pie". Also known as "The Waitress Musical Curtain Pie". The Waitress drop curtain, designed by Scott Pask, was inspired by a Salted Caramel Apple Pie by Scott's brother. His pie was gorgeous and bubbly and gooey.

​ This is what we know about Sweet Victory Pie: fresh cherries, plenty of sugar, pour into a truly flaky crust, lattice on top. So. I've created a simple, victorious cherry pie, so beautiful and so deliciously baked. This pie is ready for a Broadway stage...

Gather your ripe sweet cherries, and get out your cherry pitter (or you can cut each cherry in half and take out the pit with your fingers).

Mix in sugar.....
Dot with butter....
​Over top the flour......

Cut your lattice strips...

...lay atop your pie, overlapping each other.

Spaghetti Pie

Here's one from the movie!* All we know about Spaghetti Pie, is that Jenna makes it for Earl for dinner one night, and it's a spaghetti pie. Pretty simple and straight forward. So, I decided to add a garlic bread crust, and let me say-this one was devoured quickly!
*Update: Spaghetti Pie was featured in ART's production of Waitress!

All you need are some simple spaghetti staples. Bread, any pasta, ground beef, tomato sauce, garlic sauce mix, and parmesan cheese.

Cube enough bread to line the bottom of a 9" glass pie dish.

Mix olive oil, melted butter, mixed garlic, oregano, salt, and pepper to combine into a paste/sauce...

...and brush generously on to the cubed bread. Bake in the oven until set and starting to brown, and crisp.

While the garlic bread crust is baking, boil your pasta (used linguine here). Cook al dente...

...add tomato sauce when noodles are still very hot so the pasta doesn't clump together.

Add browned ground beef to the noodles and tomato sauce, mix all to combine.

What the garlic bread looks like out of the oven...

...and pour your noodle mixture over the crust. Bake in the oven for another 20-25mins. Cover in foil for the first 15/20 mins, then uncover for the last 5-10 mins.

Grate some fresh parmesan cheese over the hot pie when it comes out of the oven...

...and let it sit for 5-10 mins until slicing! Prepare yourself for a second... third... and possibly fourth slice!

Jenna's Sexy Pies #1: "A Little Wild, Wild Berry Pie"

Introducing a new series of pies: Jenna's Sexy Pies. These are all pies and tarts that are made for/given to Dr. Pomatter, which then leads to... some sexy time. I LOVE how they showed their affair progressing over time in the musical. The scene is especially great because it features some of the most delicious and creative pies in the show! This is pie #1 of many. A Little Wild, Wild, Berry Pie.

Those of you who have seen the show know that this is one of Nurse Norma's favorites! (And it looks like a pie that the actors (well, just Nurse Norma) gets to actually eat in the show. This pie is soooooo good. It features a layer of home made creme patisserie (a French vanilla custard), with a layer of whipped cream and topped with an array of fresh beautiful berries.

Many of Jenna's pie start with a blind baked crust... which bakes while...

...you cook up your creme patisserie.

Let your creme patisserie cool, then lay a generous portion at the bottom of your pie crust.

Slice up some strawberries and lay over the layer of creme patisserie... pour a generous layer of freshly whipped cream over the strawberries.

Place berries over whipped cream. (This mound should be heaping, but I ran out of berries!) Brush with some melted apricot jelly for shine.

Slice and enjoy those sexy layers!!
