Couch Potato Pie. O how I love thee. This pie is a Sunday morning pie. It's a Netflix binge and wearing pajamas all day, not getting up from the couch ever kinda pie. Well you have to get up once. To make this pie. But then it's back to Netflix and season 4 of OITNB.
This is a pie featured on Joe's Pie Diner's Menu Board. It is perfect for breakfast, brunch, lunch, dinner, midnight snack... you name it. Wonder if Jenna was thinking of Earl when inventing this pie? Earl seems to inspire many of Jenna's savory pies. Regardless, this pie is mouth watering. I would imagine this one is veryyy popular among the regulars at Joe's.
Wash and peel 4 medium Russet potatoes...
...then slice into 1/8-1/4 inch thick disks.
Grate some GOOD cheddar cheese.
Crack your eggs...
...whisk in milk, salt, and pepper.
Prepare your truly flaky crust (no blind baking on this one).
You see that ham in the background? Oh yeah, cube some!
First layer: grated cheese and smoked ham pieces.
Second layer: potato slices.
Layer more cheese and ham, then one more layer of potatoes. This needs to have a generous amount of potatoes. Otherwise it would be called Ham, Cheese, and Egg Couch Pie, right?
Pour egg mixture into your layers of ham, cheese, and potatoes.
Let sit for 15 mins before cutting into this beautiful thing. Once you do, you'll see. It's majestic. Okay, back to OITNB.
