For a pie created by Jenna in such negativity and despair,  it sureeeeeee is delicious!

"Jenna: I don’t need no baby, I don’t want no trouble, I just wanna make pies, that’s all I wanna do… make pies.
Becky: Hun, you okay?
Jenna: Shhhh… I’m inventin’ a new pie in my head. Tomorrow’s blue plate special. I’m callin’ it I Don’t Want Earl’s Baby Pie.
Dawn: I don’t think we can put that on the menu board hun.
Jenna: Then I’ll just call it Bad Baby Pie.
Becky: What’s in it hunnie?
Jenna: It’s a quiche with egg, brie cheese, with a smoked ham center.
Becky: Sounds good baby.
Jenna: I ain’t never gonna get away from Earl now."

From Waitress (the movie), 2007

Get your eggs, smoked ham (for the smoked ham center), and brie cheese.

Assemble your pie crust.

Bake your crust blind. Then chop your ham...

Whisk those eggs up.

Be sure to lay your slices of brie cheese in a perfect pinwheel like Keri Russell does in the film.

Smoked ham is supposed to be in the center, but I like my ham a little more evenly dispersed.

Pour your egg mixture in...

...and marvel in its beauty while also thinking about how miserable it would be to be pregnant with Earl's baby.

Mmmmmmm.... but you've momentarily  forgotten how miserable you are, and how horrible your life will be, and how you ain't ever gonna get away from Earl now... because this pie IS THAT GOOD.

This looks delicious, but do you have an actual recipe? How much ham, how much brie, how many eggs, what's the green stuff you added, and baking time and temp?

The green stuff looks like spinach but green onions would be good too. Looks like 6 eggs and use any amount of ham you like I would think. The cooking time would probably be like any other quiche.

Hope this helps!! I'm trying it tonight. Lol

Chives should work too

It's good to know that I'm not the only one inspired to bake pies by the movie and the musical Waitress. I adore Jenna, but Dawn is my favorite character, especially in the musical. Jessie Mueller is queen as Jenna, but Kimiko Glenn as Dawn stole my heart. Anyway, I made my Bad Baby Pie using a pie crust recipe I found online and just added brie, eggs, chives, a bit of nutmeg and Virginia ham. It turned out great. Your quiche looks perfect by the way!

There are many complete recipes out there, but they all add a cup of grated parm cheese and nutmeg, for some reason!

Maybe there is a reason to add these ingredients, but I don't know why. I made it WITHOUT the nutmeg but WITH the parm added. I don't get it. Next time I will leave out the parm and see what happens.

Do a search and you will see various numbers of eggs and cream amounts, from 6-8 eggs to 1 - 2 cups cream.

The best way is to try it out and see what happens. By the way, I went ahead and bought Honey Baked Ham for this since it seemed like a good idea. It was.

Cheers!

Maybe you could add the crust recipe aswell as the ingredients amount would make it easier for people to follow

Isn't this also the "Betrayed by my Eggs" Pie from the musical? That's what it is in my head lol
